Sichuan Hotpot (Mala Hotpot)
A Sichuan-style hotpot combining the numbing tingle of Sichuan pepper (ma) and the heat of chili (la). With around 3,000 years of tradition, groups gather around to blanch a variety of ingredients. Popular chains include Xiaolongkan and Dalongyi.
How to enjoy
You can split the pot half spicy (hongtang) and half mild (baitang). Dip in sesame sauce (majiang) to temper the heat.
