Peking Duck (Beijing Kaoya)
Beijing's signature dish. Crisp skin and meat from oven-roasted duck are wrapped in thin pancakes with scallion, cucumber and sweet bean sauce (tianmianjiang). Old establishments like Quanjude are famous for it.
History
It developed from Ming and Qing court cuisine and spread to the public in the late Qing. Quanjude was founded in 1864.
